INGREDIENTS
2 cups Pearl Millet flour
½ cup wheat flour
½ cup green fenugreek leaves
Salt, turmeric, red chilli powder/Green chillies paste as per taste
Oil for mixing in flour 4-5 tbs.
Curd for kneading the flour ½ cup
Water as required
For Stuffing:
Green peas – ½ cup
Green/fresh arhar/Toor – ½ cup
Green garlic ½ cup
Green coriander – ½ cup
Ginger, green chillie paste 2 tsp
Dry mango powder – 1 tbs.
Salt as per taste
Oil – two tbs for making the stuffing.
Cumin seed for seasoning
METHOD FOR MAKING STUFFING
Put 2 tbs of oil in a kadhai and when hot add cumin seed till allow it to brown. Add green peas and fresh tooralongwith other masalas like ginger and green chillie paste, salt, coriander, dry mango powder etc. Allow it to cook on slow flame till peas and toor are tender. Remove from fire and cool.
METHOD FOR PEARL MILLET GREEN CHAPATIS
Mix all the items mentioned under the ingredients column and make dough. If required add water. Make two balls and roll each like a chapatti. On one chapatti spread the filling in it and at the edges apply a little water all around. Place another chapatti on it and gently press the edges allowing both to stick from the edges all around. Fry it golden on a griddle and serve it with butter/curd.
